Slow Cooker Baked Beans

We love baked beans with grilled meat, but since I always end up adding “a little of this and that” no matter who makes the beans I decided to make my own.  It’s sort of a pain to put all this together, but the end result is worth it! 2 cups dried Navy Beans 10 cups water 6-7 pieces crispy bacon, crumbled 1/2 yellow onion, finely minced 1 clove garlic, finely minced 4 ounces tomato paste 1/4 cup molasses 3/4 cup brown sugar 1/2 teaspoon sea salt 1/4 teaspoon Maple Sea Salt Pinch chili powder Dash Taco Seasoning 1/4 teaspoon Spice Rub Boil beans in water for about 5 minutes.  Move beans and water into a 4 or 6 quart slow cooker. Cook bacon and set aside to dry.  Mince onion and garlic and brown in bacon grease.  Crumble bacon and add to slow cooker.  Drain onions and garlic and add to mixture. Add the rest of the ingredients to the slow cooker and stir.  Cook on high for about 6 hours.  Makes about 3 quarts of baked beans.
