Banana Nut Bread

Another favorite in our house. And a perfect way to get rid of those over-ripe bananas.

1 Cup sugar

2 Eggs 1/3 Cup water 1/3 Cup butter 1 2/3 Cup flour 1 teaspoon baking soda ½ teaspoon salt ½ teaspoon baking powder 1 ½ Cups mashed, ripe bananas ½ Cup chopped nuts Heat oven to 350° F. Mix the sugar and butter. Stir in the eggs. Add the bananas and water and beat for 30 seconds. Mix the flour, baking soda, salt and baking powder in a separate bowl. Stir the flour mixture into the banana mixture, only until moistened. Stir in the nuts. Pour into a greased 8 or 9 inch loaf pan. Bake at 350° F for 1 ¼ hours for 8 inch pan or 55-60 minutes for 9 inch pan.
