Cowboy Sausage and Beans
The boys all really love this ... just make sure there is plenty of ventilation for
later!
1 lb. Italian sausage (Hot, sweet, or a
combination)
6 slices Bacon, cooked & crumbled
1 Onion, finely chopped
14 oz. can crushed tomatoes
15 oz. can baked beans
15 oz. can kidney (or pinto) beans, drained
1 teaspoon prepared mustard
1 Tablespoon brown sugar
Salt & Pepper to taste
Remove sausage from casings, crumble meat
and sauté until browned. Drain and set aside.
Simmer tomatoes, onion, brown sugar, mustard, salt, and pepper for 30
minutes, stirring occasionally. Stir in sausage, beans, and bacon. Simmer for
at least 15 minutes.
4-6 servings. Freezes well if needed.
