Coconut Chicken Strips

Looking for something with a tropical taste? Or maybe just a healthier snack for the kids? These chicken strips are light and very crunchy with a wonderful coconut flavor! 1 pound chicken breast, sliced into strips ½ cup All Purpose Flour 1 teaspoon ground Ginger Sea salt and pepper to taste 2 eggs ½ cup bread crumbs ¼ cup Panko bread crumbs ½ cup shredded coconut ½ cup coconut oil Place flour and seasonings in a bowl and mix well with a fork. In another bowl, beat the eggs ith a fork or whisk until well blended. In a third bowl, mix the bread crumbs and coconut. Coat the chicken strips in the flour mixture. Dredge through the egg mixture making sure all the flour is covered. Coat the strips with the breadcrumb mixture. Melt the coconut oil in a skillet or frying pan. Heat on medium-high heat until a water droplet sizzles when added to the oil. Add the chicken pieces and fry until golden brown, about 7 minutes per side. Perfect with warm pineapple chunks and teriyaki sauce or your favorite dipping sauce.
