A concoction I came up with that yields moist, scrumptious skinless chicken breasts ... a favorite here at home2 Large boneless, skinless Chicken Breasts3 Tablespoons Olive or Safflower Oil2 Tablespoons Butter1 Tablespoon Lemon Juice1 Tablespoon Balsamic Vinegar1/2 teaspoon Chicken Seasoning1/2 teaspoon Marjoram or Tarragon1/4 teaspoon White PepperDash of Smoked Sea SaltGrated Parmesan Cheese (optional)Pre-heat oven to 350° F.In a small bowl blend the Oil, Butter, Vinegar, Lemon Juice, Seasoning, Pepper, and herb.In a glass baking dish place about 1 Tablespoon of mixture for each chicken breast. Lay the chicken breasts on top of the mixture. Spoon the rest of the mixture over the chicken breasts as evenly as possible. Lightly sprinkle with Smoked Sea Salt.Place a foil tent over the baking dish. Bake for 25 minutes at 350° F. Remove foil and sprinkle with grated Parmesan Cheese if desired. Bake for 10 more minutes.
