Papaya Chutney
A wonderful addition to chicken and fish dishes.
1 pound (roughly) finely diced papaya
¼ cup white wine vinegar
¼ cup lemon juice
1 Tablespoon safflower oil
1 Tablespoon honey
1 teaspoon dried cilantro
¾ teaspoon ground ginger root
¼ teaspoon chili powder
1/8 teaspoon ground cinnamon
Place all ingredients in a 10 inch skillet and
heat to boiling.
Reduce heat, cover, and simmer about 40 minutes, stirring occasionally.
May be served warm or cold.
