I decided to craft a potato salad using red potatoes. Since hubby and I both like them and don’t mind the skins I leave them on. So glad I wrote down what I did ... we find this to be yummy!6 Red Potatoes3 Hard-Boiled Eggs, diced4 Bacon strips, cooked and crumbled (about 1/8 cup)6 Sweet Gherkin Pickles, diced1/4 cup sliced Black Olives3/4 cup Mayonnaise1/8 cup Dijon Mustard1 teaspoon Parsley1/4 teaspoon Garlic Granules1/8 teaspoon All Purpose SeasoningBlack Pepper to tastedash Paprikapinch Sea Salt (I used Rosemary Sea Salt)Boil the potatoes for about 20-25 minutes. Allow to cool then dice.Add the diced pickles, diced eggs, sliced olives, and crumbled bacon to the potatoes in a large bowl.Blend the mayonnaise, mustard, parsley, garlic, seasoning, pepper, paprika, and sea salt in a small bowl.Pour the mayonnaise mixture into the rest of the ingredients and stir until well mixed. Cover and chill in refrigerator.
