Slow Cooker Beef Stew
I love cooking with a slow cooker. It’s a relatively easy way to have a hearty
meal without spending hours in the kitchen ... especially helpful if you have to
work during the day.
2 1/2 lbs round or swiss steak, cubed
32 oz can diced tomatoes
2 cans (16 oz) corn, drained
5 medium carrots, sliced
7 medium red potatoes, cubed
2 celery stalks, sliced
1 small yellow onion, chopped
1/2 lb green beans, cut
flour (enough to coat meat)
1 1/2 cups beef broth (can, cubes or crystals)
2 teaspoons garlic powder
1 tablespoon basil
1 teaspoon oregano
dash or two cilantro
white pepper to taste
Coat meat with flour. Add all other ingredients except tomatoes, beans and
corn. Cook on "Low" for about 4 hours. Add beans and cook for 3 more
hours. Add the corn and tomatoes and cook for 3-4 more hours.
Great served with fresh bread or dinner rolls.
Note: Beef broth crystals have a lot of salt, use sparingly
Stew meat can be used, but is more expensive than swiss or round steak.
Using a slow cooker makes even "cheap" meats tender and you can't taste
the difference.
