My Personal Spice Blends
I recently decided that it was silly to purchase someone else’s spice blend only to end up
“doctoring it up” to make it taste the way I wanted it to. So I started making up my own
blends. Some of these are my own creation, some are modified from recipes I found online.
All of these listed here are now “staples” in my kitchen.
All Purpose Seasoning Blend
1 ½ Tablespoons Onion Powder
1 ½ Tablespoons Garlic Powder
1 Tablespoon dried Parsley
2 teaspoons dried Basil
2 teaspoons dried Thyme
1 teaspoon dried Oregano
1 teaspoon dried Sage
½ teaspoon ground Coriander
½ teaspoon ground Celery Seed
Combine the Parsley, Basil, Thyme, Oregano, and Sage in an herb or coffee grinder. Grind the
herbs until almost a powder. Add the Onion Powder, Garlic Powder, Coriander, and Celery Salt
and stir or continue grinding until well mixed. Store in a labeled spice bottle.
Italian Seasoning Blend
3 Tablespoons dried Oregano
3 Tablespoons dried Basil
1 ½ Tablespoons dried Marjoram
2 teaspoons dried Sage
2 teaspoons Garlic Powder
½ teaspoon Onion Powder
Combine the Oregano, Basil, Marjoram, and
Sage in an herb or coffee grinder. Grind the
herbs until they are the desired coarseness.
Add the Garlic Powder and Onion Powder and
stir or continue grinding until well mixed.
Store in a labeled spice bottle.
Poultry Seasoning Blend
2 Tablespoons dried Sage
1 Tablespoon dried Thyme
1 Tablespoon dried Marjoram
2 teaspoons Onion Powder
1 ½ teaspoons ground White Pepper
1 teaspoon dried Parsley
½ teaspoon ground Rosemary
Combine the Sage, Thyme, Marjoram, and Parsley in an herb or coffee grinder. Grind the
herbs until they are the desired coarseness. Add the Onion Powder, White Pepper, and
Rosemary and stir or continue grinding until well mixed. Store in a labeled spice bottle.
Chicken Seasoning Blend
2 Tablespoons dried Marjoram
2 Tablespoons dried Tarragon
1 Tablespoon Garlic Powder
1 Tablespoon dried Basil
1 teaspoon dried Thyme
1 teaspoon dried Winter Savory
Combine the Marjoram, Tarragon, Basil,
Thyme, and Winter Savory in an herb or
coffee grinder. Grind the herbs until they
are the desired coarseness. Add the Garlic
Powder and stir or continue grinding until
well mixed. Store in a labeled spice bottle.
Spice Rub (for grilling)
2 Tablespoons dried Sage
1 Tablespoon Garlic Powder
1 Tablespoon ground Rosemary
1 Tablespoon ground Black Pepper
1 ½ teaspoons ground Mustard Seed
1 teaspoon ground Paprika
Grind the Sage in an herb or coffee grinder until almost a powder. Add the Garlic Powder,
Rosemary, Black Pepper, Mustard Seed, and Paprika and stir or continue grinding until well
mixed. Store in a labeled spice bottle.
Herbs de Provence
3 Tablespoons dried Marjoram
3 Tablespoons dried Thyme
3 Tablespoons dried Summer Savory
1 teaspoon dried Basil
1 teaspoon dried Lavender
½ teaspoon dried Sage
Combine all herbs in a bowl and mix
thoroughly. Store in a labeled spice bottle.
Herbed Sea Salt
3 Tablespoons Sea Salt
1 ½ Tablespoons dried Thyme
1 Tablespoon ground Rosemary
1 Tablespoon dried Lemongrass
Combine the Thyme and Lemongrass in an herb or coffee grinder. Grind the herbs until they
are the desired coarseness. Add the Rosemary and Sea Salt and stir or continue grinding until
well mixed. Store in a labeled spice bottle.
