Lavender Shortbread Cookies
Classic Scotch Shortbread cookies with a yummy twist.
¾ cup butter, softened
¼ cup + 1 Tablespoon sugar
½ teaspoon vanilla extract
2 cups all-purpose flour
1 Tablespoon ground lavender buds
Heat oven to 350° F.
Cream the butter and sugar thoroughly.
Mix vanilla into the butter/sugar mixture.
Blend in flour and ground lavender until well
mixed.
Lightly flour and roll the dough to about 1/2 inch thick. Cut into small shapes
or use a small cookie/biscuit cutter.
Place cookies about ½ inch apart on an ungreased baking sheet.
Bake at 350° F for about 15 minutes ... do not brown cookies too much.
