Walnut Spice Cake
This is my grandmother's recipe ... another of my favorites.
Cake:
2 ½ Cups all purpose flour
1 Cup granulated sugar
¾ Cup packed brown sugar
¾ cup shortening
1 ¼ Cups buttermilk
3 eggs
1 Cup chopped walnuts
¾ teaspoon ground cloves
¾ teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon baking powder
¾ teaspoon baking soda
Frosting:
½ Cup margarine or butter
1 Cup packed brown sugar
2 Cups powdered sugar
¼ Cup milk
Heat oven to 350° F. Grease and flour 2 round 9 inch pans. Beat all
ingredients except walnuts on low 30 seconds, scraping constantly. Beat on
high for 3 minutes, scraping bowl frequently.
Stir in walnuts. Pour into pans. Bake for 35 to 40 minutes or until toothpick
inserted in center comes out clean. Remove from pans after cooling 10
minutes. Finish cooling (completely).
Melt butter in 2 qt. sauce pan. Stir in brown sugar and heat to boiling,
stirring constantly. Boil and stir over low heat for 2 minutes. Stir in milk and
reheat to boiling. Remove from heat.
Cool to lukewarm and stir in powdered sugar gradually. Place sauce pan in
cold water; beat until smooth and of spreading consistency.
Frost cake.
