Grilled Chicken Salad with Berry Vinaigrette Dressing
Hubby and I both love salads and grilled chicken salads are the best. But sometimes pairing a dressing with the chicken is tough if you don’t want to go with Ranch. So I decided to take a whack at making my own ... and it came out pretty tasty and a perfect match with the chicken and fruit we added to this salad.
Chicken
2 chicken breasts, pounded flatdash of Spice RubSalt to taste (Rosemary Sea Salt is perfect here)Prepare grill (I prefer using charcoal or wood to grill with). Lightly dust chicken breasts with Spice Rub and sprinkle with salt. Grill chicken until done. Refrigerate until cool or chilled.SaladMixed greens (we use Baby Kale, Chard, Spring Mix, and Baby Spinach)Shredded CarrotsSliced Black Olives1 Medium Apple, dicedBlue or Feta cheese (or other crumbled cheese - about 8 ounces)Dried CranberriesCandied Walnuts or PecansPrepare mixed greens and toss with carrots. Add apple pieces, olives, cheese, cranberries, and nuts.Slice or dice chilled chicken and add to salad. Drizzle with Berry Vinaigrette Dressing and toss again.
