Cornish Hens with Currant Sauce
Here's one of my favorite ways to cook Rock Cornish Game Hens ...
4 Cornish hens
Stuffing (optional)
Salt and Pepper to taste
1 10-ounce jar red currant jelly
1/2 Cup golden raisins (optional)
1/4 Cup butter or margarine
2 teaspoons lemon juice
1/4 teaspoon allspice
Stuff hens if desired. Sprinkle with salt and
pepper.
In saucepan combine jelly, raisins, butter,
lemon juice and all spice. Cook on low heat,
stirring, until blended.
For cooking in a crockpot, place a trivet in the bottom of the pot. Place hens
on end, neck end down. Brush some of the sauce on hens in the pot. Brush
hens once more during cooking, if possible. Cover crockpot and cook on low
for 5-7 hours.
If using a conventional oven, preheat to 325° F. Place hens in a roasting pan
or large baking dish. Brush some of the sauce on hens prior to placing in the
oven. Cover with a foil tent and roast for about 40 minutes. Remove foil tent
and brush hens with sauce. Roast for an additional 20-30 minutes or until the
hens are browned and the internal meat temperature is 180° F.
Spoon remaining sauce over hens at serving time.
